What is the difference between a recipe and a formula?
A recipe is what you make at home, using cups, tablespoons, and pinches. A formula is how a professional specialty-food manufacturer documents yourĀ information in pounds, kilograms, grams, and other weight measurements. These weightsĀ are converted to relative percentages and then used to make any amount or batch size ofĀ your product.

Converting grams to percentages is a straightforward process. Simply add up the totalĀ grams of all your ingredients (in this sample formula, the total weight is 1399.8) andĀ then divide each individual ingredients weight by the total.
